- Grease an 8×11 or 9×13-inch baking dish.
- Proof the yeast: In a small bowl, stir together the warm water, yeast, and 1 tsp sugar. Let sit 5 minutes (until foamy).
- Mix wet ingredients: In a medium bowl, combine melted butter (or coconut oil), milk, sugar, and salt. Then stir in the yeast mixture.
- Combine and knead:Pour the wet mixture into a large bowl containing the flour. Stir until it begins to come together. Turn onto a floured surface and knead 3-4 minutes until smooth.
- First rise: Place the kneaded dough in a buttered bowl, cover (plastic wrap or a towel), and let it rise in a warm spot until doubled in size (~1 hour).
- Prepare filling: In a small bowl, mix the brown sugar and cinnamon.
- Roll and fill: Punch down the risen dough. Roll it out on a floured surface into a 20×14 inch rectangle. Brush with ~2 tbsp melted butter and sprinkle the cinnamon-sugar mixture, leaving ~½ inch of border.
- Form rolls: Starting from a short side, roll tightly into a log. Slice into 12 even rolls. Place them cut-side up in the greased baking dish. Cover and let them rise again ~1 hour.
Baking:
- Preheat the oven to 350°F (175°C).
- Bake the rolls: Uncover and bake for 25–30 minutes, until the rolls are lightly golden on top.
- Make the glaze: While rolls cool slightly (~10 minutes), whisk together powdered sugar, 3 tbsp milk, and vanilla. If too thick, add more milk.
- Glaze and serve: Drizzle glaze over warm (not piping hot) rolls. Serve.
